Finally, I went to the Doctor about my knee. It is damaged a little, but there is nothing they can do. He told me to just keep doing what I'm doing. So, that's that.
I made couscous stuffed peppers the other night. Joe's Mom & sister Betty came over for dinner, so we had this and skirt steak. This was taken before they were cooked, and I didn't get a picture after they came out of the oven, they were much prettier than here.
The couscous was cooked in chicken broth and cumin (as directed on the box). Then I added (any amount you want....) chopped spinach (uncooked), green onions, currents, corn, Armenian feta cheese, tomato, two kinds of mushrooms, chickpeas (from a can), parsley, salt, pepper and olive oil (enough to bind). Rub the topped peppers with olive oil. Stuff and cook at 375 for 30 minutes. As for measurements, use as much as you like, add or omit. Casual cooking!

Here's a preview of a future post I'm going to do on cooking pans with "history". This is the pan that gave me the idea. I think this will be very interesting, and be kind of, "pans with personality".
I think I might have gotten this one at a garage sale years ago.

brilliant! I too am interested in cooking and baking items with history- once Harry broke a 1920's glass bread "pan" that had belonged to my grandmother and I cried. Now I have to go out and find a tricycle to hang from my ceiling- whew gonna be a busy day.
